May 10th is Okinawa Brown Sugar Day! Okinawa brown sugar is made from sugarcane, which is one of the major crops in Okinawa, and is characterized by its rich mineral content. In addition to the bite-sized cubes called " Kachiwari", it is also available in powder form, making it easy to incorporate into not only cooking but also baking. BROWN SUGAR TIRAMISU
Ingredients:
3 tablespoon milk
2g gelatin powder
2 egg yolks
2 tablespoon Okinawa brown sugar
100g mascarpone cheese
1 tablespoon brandy*
100g whipping cream
1 pack brown sugar castella**
1 teaspoon instant coffee
100-150cc hot water
cocoa powder (appropriate amount)
*If brandy is not available, it can be excluded.
**If the brown sugar castella is not available, it can be substituted with the original flavour castella or white bread.
Steps:

Soak gelatin powder in the milk.

Add egg yolks and brown sugar in a bowl, and double-boil until it begins to turn white.

Warm ① in a microwave at 500-600w for 20-30 seconds, and when the gelatin powder is dissolved, add to ② and mix.

When ③ has cooled down, add mascarpone cheese and brandy, and mix thoroughly with a rubber spatula.
-
In a separate bowl, beat whipping cream until the peak stands up then softly bends downwards when lifting out the whisk. Mix it into ④.
-
Cut brown sugar castella into approximately 1 cm thick slices, spread them in a mold, and make the castella soak up the coffee by applying the coffee with a brush. Pour in half of ⑤ on top.

Place the remaining castella on top of ⑥ and soak it with coffee with a brush. Pour the remaining half of ⑤ on top.

Cool in a refregirator for about 1-2 hours, and sprinkle the cocoa powder on the top surface.
SPICED BROWN SUGAR PANNA COTTA
Ingredients:
【Panna Cotta】
300cc milk
200cc whipping cream
5g gelatin powder
60g Okinawa brown sugar powder
1 pinch cinnamon
30cc hot water
【Brown Sugar Syrup】
40g Okinawa brown sugar powder
1/2g grated ginger
40cc water
Steps:

Soak the gelatin powder in the hot water.

Place the milk and whipping cream in a heatproof container and heat in the microwave at 600W for 2 minutes. Add the soaked gelatin from ①, Okinawa brown sugar powder, and cinnamon, and mix.

Let ② cool down, then pour into cups. Store in the refrigerator to cool.

To make the brown sugar syrup, put the Okinawa brown sugar powder, ginger, and water in a heatproof container, and mix lightly. Heat in the microwave at 600W for 1 minute, and let it cool. (Be careful not to burn yourself!).

After the panna cotta from ③ is set, pour the brown sugar syrup from ④ on the top.
BROWN SUGAR CREME BRULEE
Ingredients:
150cc soy milk or milk
100cc whipping cream
2 egg yolks
30g + appropriate amount Okinawa brown sugar powder
Vanilla essence (appropriate amount)
Steps:

Preheat the oven to 150℃. Place milk/soy milk and whipping cream in a saucepan, and heat until just before it starts boiling.

Add egg yolks and brown sugar powder into a bowl and mix well until the mixture starts to turn white.
-
Add ① into ②, strain, add vanilla essence, and pour into ramekins.
-
Place ③ on a baking dish filled with boiling water, and bake in the oven for about 25 minutes.
-
After ④ cools, refrigerate. Sprinkle brown sugar on the surface and caramerize it with a torch.
*If the torch is not abvailable, a toaster oven can be used to melt the sugar on the top. The key is to keep the heat at maximum and brown the surface at once.
CRUNCHY TOPPED OKINAWA BROWN SUGAR MUFFIN
Ingredients:
【Cruncy topping】
60g cold butter
100g cake flour
10g Okinawa brown sugar
40g light brown sugar
5g cinnamon powder
【Muffin】
60g unsalted butter
30g sunflower oil
70g Okinawa brown sugar
30g white sugar
1 egg
2g vanilla extract
50g sour cream
40g milk
10g lemon juice
165g cake flour
3g baking powder
1.5g baking soda
2g salt
Steps:
[Making cruncy topping]

Blend flour, light brown sugar, Okinawa brown sugar, cold butter, and cinnamon powder in a food processor.

Gently press the mixture by hand to create small crumbs, then place in a freezer for 30 minutes.
[Making muffins]
-
Shift cake flour, baking powder, and baking soda.
-
Mix unsalted butter until soft and smooth, then mix in white sugar and Okinawa brown sugar in 2-3 batches.

Once the sugar is mixed to a certain point, add sunflower oil.
-
Add the egg at room temperature in small portions, mixing in a little at a time.
-
Add salt, vanilla extract, and sour cream, and mix.
-
In a separate bowl, pour in milk and lemon juice, and mix with a whisk to make buttermilk.

Gradually add the buttermilk from ⑥ to the muffin batter from ⑤ while mixing.

Add the shifted powder from ① and mix.
-
Place muffin cups in a muffin pan, and pour the dough into the muffin cups using an ice cream scoop .

Place the cruncy topping on the muffins.

Preheat the oven to 190°C, then bake at 180°C for 18 minutes.
*Please adjust the temperature and time according to the oven specifications.
BROWN SUGAR COOKIE
Ingredients:
200g wheat flour
100g Okinawa brown sugar
50g white sugar
1 egg
1 tsp baking powder
3 tbsp sesame seeds
100g salad oil
Steps:

Combine wheat flour and baking powder and sift them together.

Beat the eggs, then add brown sugar, white sugar, salad oil, and sesame seeds, and mix.

Add the mixture from step 1 into the mixture from step 2 and mix lightly.

Roll out the dough to a thickness of 3-5mm, cut it with your preferred shape, and arrange them on a baking sheet.

Bake in a 180-degree Celsius oven for 10 minutes.
Agarasa
Ingredients:
100g powdered Okinawabrown sugar
Crushed Okinawa brown sugar (appropriate amount)
200g flour
200ml milk
A dash of salt
2tbs baking powder
Steps:

Mix brown sugar, flour, milk, salt, and baking powder in a bowl (crumb-like texture is acceptable).

Put the brown sugar mixture on a cup and steam for 10 minutes.
