Brown Sugar Recipe

沖繩黑糖照燒雞扒
Brown Sugar Teriyaki Chicken

Berry Waffles

Ingredients:

雞扒 200g×2

沖繩黑糖粉 100g

水 50g 

醬油 100mL 

料理酒 1湯匙


[2 servings]

・Brown sugar (100g) 

・Soy sauce (100㎖)

・Chicken thighs (400g) 

・Soy sauce (100㎖)

・Cooking sake (1 tbsp) 

・Water (50g)


Steps:

  1. 將黑糖粉和水放入鍋里,用扚子一邊攪拌,以中火煮5~8分鐘,制成黏綢的黑糖蜜。

  2. 用叉子在雞肉表面戳幾個洞。

  3. 將黑糖蜜和醬油以小火煮後,加酒。

  4. 以中火將雞肉兩面煎至焦黃色後,蓋上鍋蓋悶5分鐘。

  5. 打開鍋蓋將步驟3的醬油放入步驟4的雞肉中,拌勻煮至入味。


Preparation:

  1. Combine brown sugar and water in a pan and simmer on medium heat for about 5-8 minutes until thick syrup is formed.

  2. Poke holes in the chicken with a fork.


Steps:

  1. Combine the brown sugar syrup and soy sauce and simmer on low heat until thickened, then add cooking sake.

  2. Cook the chicken in a skillet on medium heat until both sides are golden brown, then cover it and steam for about 5 minutes.

  3. Remove the cover, add ① and cook for a further minute.


相比起白砂糖,沖繩黑糖含有含有鈣、鉀、鐵等礦物質以及維他命B1、B2和氨基酸等。鉀能夠排出體內多餘的鹽分,保持血壓正常。鈣能預防高血壓、動脈硬化和骨質疏鬆症,安定焦躁情緒等。

沖繩黑糖在日本國內十分受歡迎,有很多出名的和菓子店都會選用沖繩黑糖作為材料。
