Purple Sweet Potato Recipe

沖繩紫薯大理石雪芳蛋糕
Purple Sweet Potato Marble Chiffon Cake

Berry Waffles

Ingredients:

(14cm蛋糕模)

低筋麵粉 70g

沖繩紫薯粉 30g

水 5湯匙+1/4杯

雞蛋 3個

白砂糖 60g

植物油 25g+15g



(14cm cake mold)

70g cake flour

30g purple sweet potato powder

5 tablespoon + 1/4 cup water

3 eggs

60g granulated sugar

25g + 15g vegetable oil

Steps:

  1. 低筋麵粉過篩,平均分成2份備用。

  2. 砂糖分成30g、20g和10g備用。

  3. 沖繩紫薯粉和5湯匙的水拌勻至成爲紫薯糊備用。

  4. 分開雞蛋中的蛋白和蛋黃,然後分成淨蛋白、2隻蛋黃和1隻蛋黃的3碗備用。

  5. 蛋白打發至起泡,然後將30g的砂糖分2-3次倒入拌勻,攪拌至變成稍微挺身的蛋白霜後,平均分成2份備用。

  6. 在有2隻蛋黃的碗中加入20g的砂糖拌勻,再將25g的植物油分開數次倒入拌勻,再倒入1/8杯的水拌勻,成爲白色粉漿。

  7. 在有1隻蛋黃的碗中加入10g的砂糖和③的紫薯糊拌勻,再將15g的植物油分開數次倒入拌勻,再倒入餘下的1/8杯水拌勻,成爲紫薯粉漿。

  8. 在⑥的白色粉漿中加入④的1份中少量的蛋白霜拌勻,然後加入1份低筋麵粉拌勻,最後加入1份蛋白霜中餘下的蛋白霜拌勻,成爲原味麵糊。

  9. 在⑦的紫薯粉漿中加入④的1份中少量的蛋白霜拌勻,然後加入1份低筋麵粉拌勻,最後加入1份蛋白霜中餘下的蛋白霜拌勻,成爲紫薯麵糊

  10. 首先用匙羹將⑨的紫薯麵糊鋪在蛋糕模的底部,然後交叉倒入⑧的原味麵糊與⑨的紫薯麵糊到蛋糕模中,形成大理石紋後,除去麵糊中的空氣。

  11. 將麵糊放入已預熱成170℃的焗爐中焗20-25分鐘。

  12. 出爐後,利用玻璃樽倒放蛋糕模,蛋糕放涼後用刀脫模取出。

  13. 將⑪的蛋糕切成幾份上碟,可按照個人喜好加上鮮忌廉等享用。


【雪芳蛋糕三文治做法】

將蛋糕切成6等分後夾上鮮忌廉和切成小塊的蒸紫薯。用忌廉芝士去代替鮮忌廉也很好吃哦!




  1. Sift the flour and divide in half.

  2. Divide the sugar into 30g, 20g, and 10g.

  3. Mix the purple sweet potato powder and 5 tablespoon water to make purple sweet potato paste.

  4. Separate the eggs into egg whites and yolks, and divide into 3 separate bowls; egg whites only, 2 egg yolks, and 1 egg yolk.

  5. While beating the egg whites, add 30g of sugar in 2~3 parts and make a meringue with stiff peaks, and divide it in half.

  6. 【White dough】Mix 20g sugar in the bowl with 2 egg yolks, gradually mix in 25g of sesame oil, add 1/8 cup of water and mix well.

  7. 【Purple sweet potato dough】Mix 10g sugar and ③ in the bowl with 1 egg yolk, gradually mix in 15g sesame oil, then add 1/8 cup of water and mix.

  8. In the bowl of 【white dough】from ⑥, mix in a small amount of the meringue from ⑤, add half of the flour and mix well, then mix in the remaining meringue.

  9. Repeat the same process from ⑧ for the 【purple sweet potato dough】from ⑦.

  10. Spread ⑨ on the bottom of the cake mold with a spoon, then pour in the dough from ⑧ and ⑨ alternately so that it forms a marble pattern, and release the air out of the dough.

  11. Bake in the oven at 170℃ for 20-25 minutes.

  12. Once the cake is baked and out of the oven, use something like a bottle to hold the cake mold upside down while it cools down, and then remove the cake from the mold with a knife.

  13. After cutting ⑪, place on a plate and decorate with the garnish of your choice, such as whipped cream, etc.


【How to make a chiffon cake sandwich】

After cutting into 6 pieces, make a slit in the middle of each piece and add whipped cream or steamed purple sweet potatoes in the gap. Cream cheese can also be used instead of whipped cream.


沖繩紫薯含有豐富的花青素、β-胡蘿蔔素、維他命C、鉀和食物纖維。花青素帶有抗氧化能力,可防止衰老,亦可減少患有心血管疾病等都市病的機會。沖繩紫薯對於繁忙的都是人來說,是一種不錯的食材。

8月至1月出產的沖繩紫薯的皮中更含有綠原酸,把紫薯皮仔細地洗乾淨後,再連皮吃的話,能吸收更多的營養。
