沖繩紫薯沙律
Purple Sweet Potato Salad
Ingredients:
沖繩紫薯 200-250g
急凍青豆 4湯匙
穀麥 適量
喜歡的醬汁 適量
200-250g purple sweet potatoes
4 tablespoon frozen green peas
Granola (appropriate amount)
Dressing of your choice
Steps:
沖繩紫薯切成約1cm的小粒,切好的紫薯粒放入水中浸以除去澀味,除去水份後放入微波爐中加熱煮熟。
青豆放在水中煮熟。
在容器中分層放入穀麥、紫薯粒和青豆,最後倒上喜歡的醬汁。
Cut purple sweet potatoes into 1 cm pieces and soak them in water. After draining them from the water, heat in a microwave to cook through.
Boil green peas.
Place granola in a dishware of your choice, then add the layers of purple sweet potato and green peas on the top. Drizzle the dressing of your choice to finish off.
沖繩紫薯含有豐富的花青素、β-胡蘿蔔素、維他命C、鉀和食物纖維。花青素帶有抗氧化能力,可防止衰老,亦可減少患有心血管疾病等都市病的機會。沖繩紫薯對於繁忙的都是人來說,是一種不錯的食材。
8月至1月出產的沖繩紫薯的皮中更含有綠原酸,把紫薯皮仔細地洗乾淨後,再連皮吃的話,能吸收更多的營養。
