沖繩水雲蠔仔餅
Okinawa Mozuku Oyster Egg Omelette
材料 | Ingredients:
・急凍沖繩水雲 150g
・蠔 150g
・雞蛋 3隻
・芫荽 1棟
・紅辣椒 1隻
・生粉 1湯匙
・木薯粉 2湯匙
・水 2湯匙
調味:
・胡椒粉、糖、麻油 少許
・魚露 2茶匙
Frozen Okinawa Mozuku 150g
Oyster 150g
Egg 3pcs
Coriander 1 bundle
Red pepper 1pc
Potatoes starch 1tbsp
Tapioca starch 2tbsps
Water 2tbsps
Seasoning:
White pepper a little
Sugar a little
Sesame oil a little
Fish sauce 2tsps
步驟 | Steps:
蠔用生粉搓揉,用水把蠔沖洗乾淨,再瀝乾水份。
雞蛋打拂後,加入糖、麻油、胡椒粉和魚露。
木薯粉加水拌勻後,將澱粉水攪拌到混合物中。
加入沖繩水雲、蠔、紅辣椒和芫荽拌勻。
將材料倒入煎鍋,把兩邊煎熟至金黃色。
蠔仔餅可以蘸沖繩香檸汁一起吃。
Knead the oysters with potatoes starch, rinse the oysters until clean, then drain the oysters.
After whisking the eggs, add sugar, sesame oil, white pepper and fish sauce
Mix tapioca starch with water, and stir starchy water into the mixture.
Add Okinawa mozuku, oysters, red pepper and coriander, then stir well.
Pan-fry the omelette ingredients, pan-fry on both sides until golden brown.
Dip the oyster egg omelette in Okinawa shikuwasa juice.
